Chefs for Three day Italian cooking school Italy

Franco Palandra - chef at Torre del Tartufo

Franco Palandra was born in a small village in the south of Italy, called Camigliano (near Caserta).  At the age of 14 he enrolled at the National Hotellerie institute of Italy for a five year course and graduated when he was 19. During the summer vacations he worked in different parts of Italy in Restaurants and Hotels, studying the different regional Italian cuisine.
After graduation he decided to travel and work in Europe to study the cuisine of other European countries and to learn different techniques. He worked in England as an assistant chef and learnt a great deal in the kitchen as well as how to speak English! Franco also worked in France, Switzerland and Greece on Rhode and has through his travels and experience given traditional Italian dishes an international character making his dishes truly special. This passion to experiment and innovate gave him the opportunity to work on board the Caronia vessel of the Cunard line. His Italian restaurant on board this luxury cruise vessel was a great success and he was appointed head chef of the restaurant.
Franco lives with his girlfriend (Paola) and his dog in Arezzo, where he works as a chef in one of the top restaurants in the medieval old town.  During his free time Franco loves doing freelance photography, hiking and helping out at the dog refuge center.

Franco is the chef at the Tuscookany cooking school Italy and has outstanding reviews.

Franco chooses dishes depending on the season and uses fresh ingredients preferably from our organic gardens - have a look at an idea of some of the dishes you might make.

Author of the cookbook Tuscookany The flavours of Tuscany.

Alice Cornacchini - chef at Casa Ombuto

Alice was born in Genova, a port city on the Mediterranean sea.  She is a Mediterranean woman at heart with the sea flowing in her veins. Alice studied to be a teacher and earned a degree in Ancient Roman history from the University of Siena.  She embarked on her culinary career as a student by working in local restaurants and discovered her life-long passion:  cooking.
In 2001, Alice and her husband, Alfonso, realized their dream of opening their own restaurant – “Le 3 Civette” – located in Parco di Lignano, a beautiful natural reserve park near Arezzo. Alice currently lives in the countryside of Arezzo with her husband, their son (Elia), and their dog (Byron).
Alice lives by two mottos when it comes to cooking. First, “Food tells a story.” Every cuisine  has a specific culinary history, so food has become an expression of that culture, history, and even politics.   Alice will teach you the Italian cuisine and also the special stories and their meaning in every ingredient used in the recipes.
The second motto Alice uses is “Cooking is an act of love.” People express themselves through cooking. Even the same recipe, prepared by different people will be different. Emotion, joy, and love are added ingredients that every person has inside one’s heart that cannot be measured or bought and Alice invites you to join her at the Three day Italian cookery course at Casa Ombuto to show her love for cooking and sharing this with you.

She has selected many wonderful traditional Tuscan recipes  - view her Italian Menu
